Pull apart chocolate chip brownie cookies that have a pool of toasted marshmallow in the center. These marshmallow brownie cookies take smores cookies to the next level!

Step 1. Cream butter and white sugar in a bowl.

  • Sugar and butter in a bowl.

Step 2. Add in egg one at a time into the batter until combined.

Step 3. Pour all purpose flour, cocoa powder, salt, baking powder into the wet mixture.

Step 5. Divide dough into 10 cookies. Then flatten one and press the marshmallow into each cookie. Then press chocolate chips into the sides of the cookies. Then place cookies in the fridge for 30 minutes before baking.

  • Unbaked cookies with marshmallow in the center.
  • Chocolate chips pushed into cookie dough.

Step 6. Heat oven to 375F, take cookies out of the fridge and then bake for 12-14 minutes. Cool before eating as the marshmallows get hot!

  • Make sure you put your cookies in the fridge before baking so that they keep their shape.
  • Don’t overmix your batter as it’ll cause gluten to formmm you want to make sure they just come together!
  • Don’t cover up the marshmallows completely with the cookie or you won’t see them spread when you bake!

  • Room Temperature: Store at room temperature in an an airtight container for up to 3 days.
  • Fridge: Cool cookies completely and store them in an airtight container for up to 1 week.

Ingredients
  

  • 1 1/2 Cup All Purpose Flour (150 Grams)
  • 1/2 Cup Cocoa Powder (50 Grams)
  • 1 1/4 Cup White Granulated Sugar
  • 2 Eggs (Grade A Large)
  • 8 tbsp Unsalted Butter (113 Grams / 1 Stick)
  • 8 Large Marshmallows
  • 1 1/4 tsp Baking Powder
  • 2 tsp Salt
  • 1/3 Cup Chocolate Chips (57 Grams)

Instructions
