These soft and chewy maple oatmeal cookies taste like fall in one delicious bite! They’re sweetened with maple syrup and brown sugar and will easily become a repeat cookie in your home!

😋 Taste

  • Extra chewy due to old fashioned oats
  • Sweetened with brown sugar and maple syrup
  • Buttery and flavorful

🛒 Ingredient notes 

  • Butter: 1 stick of unsalted room temperature butter.
  • Maple Syrup: I used “Amber” color maple syrup for a light flavor.
  • Egg: 1 egg for structure and 1 egg yolk for moisture!
  • Light Brown Sugar: The molasses in the light brown sugar helps to keep the cookies moist and chewy in the center
  • White Granulated Sugar: I didn’t want the cookies to spread too much by only using light brown sugar so I added this in to to balance out the cookies.
  • Flour: All purpose is perfect for this recipe!
  • Old Fashioned Rolled Oats: Make sure to use this specific type of oat as other variations will result in different cookie textures.
  • Baking Soda: Helps with the rise in the cookie.
  • Salt: This will bring out the sweetness of the cookie!

🗒️ Instructions

Before you start: Heat the oven to 350 degrees F and prepare a sheet pan with parchment paper.

Step 1. Mix flour, salt, oats and baking soda in a bowl and set aside.

Step 2. Whip room temperature butter, brown sugar and white sugar in a bowl for 4 minutes on medium with an electric mixer.

Step 3. Add egg and vanilla to the wet mixture.

Step 4. Add dry ingredients to wet mixture and mix till just combined.

Step 5. Roll out cookies into balls and place in the oven to bake.

Step 6. Bake for 13-15 minutes until cookies are shiny!

👩‍🍳 Top tips 

  • Cream butter and sugar for four minutes as this whips air into your cookie and will keep your cookies light and fluffy. Here’s an article if you want to learn a little more about creaming butter and sugar!
  • Use room temperature butter (not melted)! To speed up this process you can cut up your butter into small pieces and microwave in 10 second spurts.
  • Don’t over-mix your batter or you will end up with dense cookies.
  • Scrape the sides of your bowl as you mix to make sure you are incorporating all your ingredients together.

🤔 Substitutions

  • Swap old fashioned oats with quick oats: The cookies may not end up as chewy!
  • Swap maple syrup with honey: You can use honey instead of maple syrup but it won’t taste the same!

🧺 Storage tips

  • Room Temperature: Store at room temperature wrapped in an an airtight container for up to 3 days.
  • Fridge: Cool cookies completely and store them in an airtight container for up to 1 week.
  • Freezer:
    • Cookie Dough: Roll cookie dough into individual balls before placing them in an airtight container or freezer safe bag. They will be good for up to 3 months but note the date of when it was made on the container! Thaw cookie dough for 20-30 minutes before baking.
    • Baked Cookies: Cool cookies completely and then place them in an airtight container or freezer safe bag and put in the freezer for up to 3 months. They will be good for up to 3 months but note the date of when it was baked on the container! Thaw cookies at room temperature or microwave before eating.

🙋Frequently asked questions

Why did my oatmeal cookies go flat?

There are a few reason why the cookies may have gone flat but here are a few trouble shooting tips:

  1. Butter was melted instead of at room temperature.
  2. Cookies were too warm before they went into the oven. You can fix this by placing them in the fridge for 30 minutes.
  3. You flattened your cookies into disks instead of rolling them into balls.

What type of maple syrup is best?

To get the best flavor our of these chewy maple oatmeal cookies use 100% pure maple syrup and not maple flavor syrup. “Golden” or “Amber” color maple syrup will have a more subtle flavor while “Dark” or “Very Dark” color will taste more intense in these cookies.

Ingredients
  

  • 8 tbsp Butter (1 Stick)
  • 3/4 tsp Baking Soda
  • 1 tsp Salt
  • 1 Cup Old Fashioned Rolled Oats (100 Grams)
  • 1 1/2 Cups All Purpose Flour (180 Grams)
  • 1 Egg + 1 Egg Yolk (Grade A Large)
  • 1/4 Cup White Granulated Sugar (50 Grams)
  • 1/2 Cup Light Brown Sugar (100 Grams)
  • 2 tbsp Maple Syrup (40 Grams)

Instructions
 

  • Heat oven to 350F and line a large baking sheet with parchment paper.
  • Mix flour, salt, oats and baking soda in a bowl and set aside.
  • Whip butter, brown sugar and white sugar in a bowl for 4 minutes on medium with an electric mixer
  • Add in egg and vanilla to wet mixture.
  • Slowly add dry mixture into wet mixture until fully incorporated.
  • Shape dough into cookie balls and pop them into the fridge for 10 minutes before baking them in the oven
  • Bake cookies for 10-12 minutes until done and cool before eating.
