A light and fluffy, homemade birthday cake loaf (also called confetti cake or funfetti cake)!  This soft, snow-white cake is speckled with brightly colored sprinkles and iced with a sweet buttercream frosting โ€” itโ€™s the perfect homemade birthday cake!

๐Ÿง What is funfetti cake?

Funfetti cake is a fluffy, light vanila cake with sprinkles mixed in. Classic recipes use a white cake recipe, but this version is made with whole eggs for moisture and richness.

๐Ÿ—’๏ธ Step by step instructions 

Before you start: Heat oven to 325F and prepare and grease a 9โ€ณx5โ€ณ pan.

Step 1. Whip room temperature butter and white sugar in a bowl until light and fluffy. Next add both eggs, vanilla extract and milk into the bowl until smooth. Then add in flour, baking soda and baking powder to the mixing bowl and mix again.

Step 2. Add sprinkles into the bowl until combined and then pour into a baking pan. Bake for 50 minutes until done and then cool before adding frosting.

Step 3. Pour batter into pan then bake for 45 minutes. Let loaf cake cool before putting on glaze. Make optional glaze by mixing powdered sugar, maple syrup and milk and then pour on cake!

  • Use room temperature ingredients! This will ensure all ingredients mix together smoothly and allow you to beat the air into the batter to get that fluffy cake youโ€™re looking for.
  • Cool cake before adding frosting so that it doesnโ€™t melt away!
  • Bake at a low temperature! By baking your cake at 325ยฐF, you ensure a slow steady bake that keeps all the moisture locked in.

๐Ÿ’ก Variations

While this cake is delicious on its own I topped it with a basic vanilla frosting with red food coloring to give it that pretty pink color!

  • Room Temperature: Store at room temperature in an an airtight container for up to 3 days.
  • Fridge: Store birthday cake loaf in an airtight container for up to 1 week.

Funfetti Cake

  • 2 Cups All Purpose Flour (240 Grams)
  • 1 1/2 Cups White Granulated Sugar (300 Grams)
  • 1 tsp Baking Powder (4 Grams)
  • 1 tsp Baking Soda (4 Grams)
  • 16 tbsp Unsalted Butter (226 Grams / 2 Sticks)
  • 1/4 Cup Vegetable Oil (60 Grams)
  • 3/4 Cup Milk (180 Grams)
  • 2 Eggs (Grade A Large)
  • 1/2 Cup Sprinkles (80 Grams)
  • 2 tsp Vanilla Extract (8 Grams)

Buttercream Frosting

  • 16 tbsp Unsalted Butter (226 Grams / 2 Sticks)
  • 4 Cups Confectioners Sugar (480 Grams)
  • 1/4 Cup Milk (60 Grams)

Instructions
 

  • Heat oven to 325F and prepare and grease a 9"x5" pan.
  • Whip room temperature butter and white sugar in a bowl until light and fluffy.
  • Then add both eggs, vanilla extract and milk into the bowl until smooth.
  • Next add in flour, baking soda and baking powder to the mixing bowl and mix again.
  • Add sprinkles into the bowl until combined and then pour into a baking pan.
  • Bake for 50 minutes until done and then cool.
  • Make frosting by mixing room temperature unsalted butter, confectioners sugar and milk and then spread on top of cake.
